Lasagna







Ingredients - 

Red Peppers - 2
Yellow Peppers - 2
Garlic - 2

Onion - 1
Cloves - 2
Tomatoes - 6
Black Olives - 50 gms
Brown Sugar - 50 gms
Sherry - 45 ML
Rosemary Sprigs - 3-4
Olive Oil - 30 ML
Salt - To Taste 
Pepper - To Taste
White Sauce - 200 ML
Tomato Sauce - 200 ML
Cheddar Cheese - 300 gms
Fresh Basil - 25 gms


Method 

Seed the red and yellow peppers, then cut into strips.
Pre heat the oven to 200 C and roast the peppers, onion, garlic, tomatoes and olives.
Sprinkle over the sugar then pour over the sherry,
Season well, cover with foil and bake for 45 min.
Remove the foil from the tin and stir to mix. 
Add the rosemary sprigs.
Drizzle over the olive oil.
Return to the tin to the oven for 30 mins. more until the vegetables are tender.
Blanch the pasta sheet in hot salted water.
Layer pasta sheet with tomato sauce, white sauce and fresh basil.
Sprinkle grated cheese.
Repeat the process twice.
Cover the top with white sauce and put cheese on top.
Bake in oven and serve hot.


Recipe of White Sauce - 

Ingredient 

Refined Flour - 90 gms
Butter - 110 gms
Milk - 1 ltr
Salt - 5 gms

Method 

Take a pan and heat up butter.
Make sure the heat is low and butter doesn't burn.
Once all the butter is melted, add refined flour and mix using a spatula.
All the butter and flour should mix and cook this mixture for 1 minute
Add milk and use a whisk to mix well and ensure no lumps are formed.
Cook till the sauce is hot enough and just starts to boil.
Season with salt, cool and preserve for use.


Recipe Of Tomato Sauce

Ingredients

Onion - 45 gms
Butter - 15 gms
Carrot - 50 gms
Celery - 15 gms
Tomatoes - 1 kg
Water - 700 ml

Method

Heat the butter in a pan and sauté the onions till they are translucent.
Add chopped carrot, chopped celery and cook them till they are soft.
Pass the tomatoes through the mincer attachment of Kitchen Aid and make a puree.
Add the puree to the vegetables and cook them together.
Adjust the thickness by adding water.
Stir occasionally and blend using the stick blender to get a smooth sauce.
Season and use as required.
