Corn & Capsicum In Coconut Gravy by Saveen Kaur


So I made this dish purely out of mood and going by my instinct and it turned out to be so damn delicious 😍😋


I love Coconut flavor so making this curry in coconut milk was an absolute delightful experience. 




Ingredients

1/2 cup Coconut Milk
1/2 cup Water
1 Onion chopped
1 Corn on Cob boiled, you can also use Sweet Corn boiled. 
1 Capsicum diced
1 Clove Garlic chopped
1 tbsp Tomato Ketchup 
A pinch of Black Pepper Powder 
Salt to taste
1 tsp Turmeric Powder 
1 tsp Dried Oregano 
1 tsp Red Chilli Powder 
1 tsp Sugar 
1 tbsp Oil


Method

Heat oil in a Kadhai. 
Add chopped garlic and onion. 
Cook for a minute on medium flame. 
Add boiled corn and capsicum. 
Add all spices, herbs and salt. 
Mix it all well. 
Add tomato ketchup and mix in well. 
Add coconut milk and water. 
Give it a boil. 
Add sugar. 
Cook the gravy on medium heat till it thickens. 
Serve it hot with Steamed Rice, tastes fab 😍🔥
