Tis the Season of Fresh Salad's 😍

Hey lovelies so Summer Season is the season where I enjoy eating fresh Salad's and prefer having them as much as possible over gravy based food.

They are healthy and nutritious!

So below I am sharing with you lovelies recipes of some of my favourite Salad's!

Easy to make and so delicious 😍😋


The Three P Salad - Potato, Pineapple and Peas Salad




This is my special salad where I have wrapped potatoes, pineapple and peas along with bread croutons using chia seeds and walnuts for their nutty flavor, rose petals for looks and pleasant rose taste, spiced it with peppers and oregano in a creamy dressing of mayonnaise and cream.

Ingredients

1 tin pineapple
8-10 baby potatoes - boiled and peeled
1/4 cup peas - boiled
2 cheese cubes grated
1 cup mayonnaise
1/2 cup cream
1 tsp salt
1 tsp cayenne pepper grounded
1 tsp white pepper grounded
1 tsp oregano
1 tsp sugar
1 tsp grounded rose petals
1/2 cup bread croutons 
2 tsp chia seeds
50 gms walnuts
1/2 tsp red chilli flakes


Method
 
Cut baby potatoes in round slices.
Wash 5-6 slices of pineapple and cut it into pieces like you can see in the picture. 
To make the salad dressing, mix together in a bowl, mayonnaise, cream, salt, both pepper's, oregano, sugar, ground rose petals, grated cheese, red chilli flakes, half chia seeds and walnuts broken into small pieces. Put it in the refrigerator to cool for sometime. 
Place baby potatoes, peas, pineapple, bread croutons in a bowl. Pour the dressing over the veggies and mix well. Decorate it with pineapple, bread croutons powder, chia seeds, grated cheese and walnuts and rose petals.
Keep it in the refrigerator for half an hour minimum or till serving time. 



Cheesy Dilkhush Tacos




Dilkhush is a salad that is served in langar*. It is one of my favorite's. It actually makes your Dil / Heart Khush / Happy :)

In Cheesy Dilkhush Tacos, I have given the Dilkhush a little twist by adding grated cheese and stuffed them in tacos. It turned out to be amazing! My brother, who shrugs on the sight of vegetables served in food, loved it so much that he insisted on getting it made every day. Seeing this it made my dil khush ;)

A healthy option, it is an interesting way of serving salad, specially for people who don't like eating salad's.

Ingredients

1 packet of Tacos
1 onion chopped finely
1 tomato chopped finely
1 cucumber chopped finely
2 green chillies chopped finely
1/2 tbsp lemon juice
1 tsp sugar
1 tbsp coriander
2-3 cubes of cheese grated
1 tsp salt or to taste
1 tsp red chilli powder


Method 

Mix all the above contents together and stuff the filling inside the tacos. Garnish with grated cheese and coriander.



*{Langar is the term used in the Sikh religion or in Punjab in general for common kitchen/canteen where food is served in a Gurdwara to all the visitors (without distinction of background) for free. At the langar, only vegetarian food is served, to ensure that all people, regardless of their dietary restrictions, can eat as equals. Langar is open to Sikhs and non-Sikhs alike. Tangy Garden Salad




Absolutely fresh and tasty salad with a little extra tangy zing ;)
You know my family is not really a salad eating family so was wondering what to do if this salad is not finished but to my surprise by the time I sat for lunch, I got just a spoon of it to eat. It was all over! They enjoyed it so much :)


Ingredients

1 cucumber chopped
1 tomato chopped
1 onion chopped
1 tbsp coriander chopped
2 tsp lemon juice
1 tsp salt or to taste
1 tsp red chilli powder
Half tsp black pepper powder
1 tbsp crushed peanuts
2 green chillies chopped


Method

Mix in all the above contents together well.
Garnish it with chopped coriander and crushed peanuts.





Healthy Corn Salad




A healthy and tasty hot corn salad!
Monsoon's are the best time to indulge in corn, specially hot corn so while it was pouring outside, I thought of making this kind of easy and yummy salad :)


Ingredients

1 cup corn - boiled or pressure cooked
1 tomato - chopped
1 onion - chopped
1 tbsp chopped coriander for garnishing
Salt to taste
1 tsp red chilli powder
1 tsp black pepper powder
1 tsp butter

Method

Heat butter in a pan.
Add onions.
Add chopped tomatoes and cook for a minute.
Add salt, red chilli powder and black pepper powder.
Cook for a few minutes.
Add corn and mix well.
Remove it from flame and put in the serving bowl.
Garnish with Coriander and serve hot!






Chana Chaat Salad 




This Warm Chana Chaat Salad is everything!

Ok so I have come up with this name for the dish just like I have come up with this dish!

So the combination of Onion, Tomato, Green Chillies and Coriander is one of my most favourite one and to this I have added boiled Warm Chickpeas!

Trust me when I say this that this easy peasy salad will not only make your taste buds happy and soul happy but will also make you feel full and satiated!

Ingredients

1 cup Warm Kabuli Chana ( Chickpeas ) 
1/2 Cucumber diced
1 Onion chopped
1 Tomato chopped
2 tbsp Coriander chopped
Salt to taste
1 tsp Red Chilli Powder
1 tsp Black Pepper Powder
1 tsp Chaat Masala
1/2 Lemon juice
1 Green Chilli chopped


Method

Soak the Chickpeas overnight.
When cooking, drain the overnight water, put them in a pressure cooker, add fresh water and salt. 
Give it 5-6 whistles and then let them be in the pressure cooker warm till the time when you will start making the salad.
In a bowl, add all the veggies, salt, spices and lemon juice and mix them well. 
Add warm chickpeas and mix them well. 
Keep it covered for 5-10 minutes.
Then garnish it with chopped Coriander.
Serve and Eat :) 





Rajma Salad 




Nutritious and Delicious Warm Rajma Salad to satisfy your health goals and taste buds :) 

This is one of the best Salad to indulge in if you are on a weight loss spree and workout!

It takes care of your protein and fibre intake and at the same time it is so so delicious...

Eat it warm to relish it more :) 



Ingredients


1 cup Warm Kabuli Chana ( Chickpeas ) 
1/2 Cucumber diced
1 Onion chopped
1 Tomato chopped
2 tbsp Coriander chopped (optional)
Salt to taste
1 tsp Red Chilli Powder
1 tsp Black Pepper Powder
1 tsp Chaat Masala
1/2 Lemon juice
1 Green Chilli chopped


Method

Soak the Rajma overnight.
When cooking, drain the overnight water, put them in a pressure cooker, add fresh water and salt. 
Give it 5-6 whistles and then let them be in the pressure cooker warm till the time when you will start making the salad.
In a bowl, add all the veggies, salt, spices and lemon juice and mix them well. 
Add warm Rajma and mix them well. 
Keep it covered for 5-10 minutes.
Then garnish it with chopped Coriander (optional).
Serve and Eat :) 



Sweet And Spicy Corn Cheese





Its an excellent and yummy combo of Sweet and Spicy ;) Spiced Sweet Corn and Sweet Dill leaves taste amazing. I have this strange habit that when I eat something sweet, I need something spicy along too and vice versa. No wonder I love chaats, that is one kind of stuff, I can never get bored of ;)

Ingredients

2 cups fresh sweet corn - Boil them
3 cheese cubes grated
1 tbsp lemon juice
1 green chilli chopped
1 tsp salt or to taste
1 tsp red chilli powder
1 tsp black pepper powder
2 tbsp dill leaves chopped
1 tbsp butter         


Method

Heat butter in a pan, add corn, chopped green chillies, salt, red chilli powder, and black pepper powder. Mix well.
Add grated cheese and mix well.

Add dill leaves.
Remove from heat.
Add lemon juice and mix well.
Garnish with grated cheese and dill leaves.
And Relish the yummy combo :)


Very easy and quick to make!

        

Sweet & Spicy Nutty Curd Salad



A delightful Salad made of chopped Onions, Tomato and Cucumber, covered with little curd, tossed in crushed peanuts and chopped green chillies, seasoned and sweetened with spices and sugar and garnished with coriander!


In summers you don't feel like having very heavy food so this Salad is perfect for those times as its sweet and spicy and has a nutty flavour and can be really filling. You won't really feel you are missing out any meal when you indulge in this.

Ingredients

1 chopped onion
1 chopped tomato
1 chopped cucumber
1 tbsp chopped coriander
1 tbsp crushed peanuts
1 tsp salt or to taste
1 tsp red chilli powder
1 tsp sugar
3 green chillies chopped
1 tbsp curd or little more as per preference

Method

Toss in all the ingredients together and mix them well.
Garnish with chopped coriander and chillies and sprinkle crushed peanuts over it.
Relish :)
