Corn & Capsicum Open Sandwich by Saveen Kaur


Made in a jiffy, one of the best breakfast option for me! I am sure it will be for you too 😊

So easy to make is this Corn & Capsicum filling!

I have made this a bit spicy but it can be made kids friendly too if you replace the Red Chilli Sauce with Tomato Ketchup!

It is so healthy and nutritious and if you want to make it more healthier so you could replace cheese with fresh homemade cottage cheese!

Ingredients -

1 cup Boiled Sweet Corn
1 Onion
1 Capsicum
5-6 Cherry Tomatoes
1 Cheese Cube grated
1 tbsp Red Chilli Sauce or Tomato Ketchup
2 tsp Pav Bhaji Masala
Salt to taste
1 tbsp Olive Oil
4 slices of Bread
Butter (optional)

Method -

  • In a kadhai, add oil and heat it.
  • Add chopped onion, cook them till they change colour and turn transparent.
  • Add diced capsicum and cook for 2-3 minutes.
  • Add boiled corn and mix well.
  • Add cherry tomatoes
  • Add salt and pav bhaji masala and mix in well.
  • Add red chilli sauce or tomato ketchup and mix everything well.
  • Toast four slices of bread.
  • You can butter the bread if you want, I had skipped it.
  • Spread out the cooked mixture over the bread slices.
  • Garnish them with grated cheese.
Serve hot and indulge hot 😋

You can eat it without bread too, it tastes so good!!!

You can make this for your breakfast or evening snacks!

I am sure your kids and family will love this too!
