Minestrone



Minestrone is a traditional Italian soup. 


Vegetables can change as per the season and availability. 


Ingredients


Onion - 30 gm
Leeks - 35 gm
Carrots - 30 gm
Celery - 30 gm
Savoy Cabbage - 50 gm
Tomato Puree - 40 gm
Vegetable Stock - 1 lt
Potato - 30 gm
Zucchini - 30 gm

White Beans - 15 gm


Method 

1. Sauté dice onion and leek in olive oil until tender.
2. Add the diced zucchini, potatoes, celery, carrot and cabbage and sauté.
3. Add tomato puree and stock and simmer for 1 hour.
4. Add white beans and continue to cook.
5. Make a pesto by combining the olive oil, garlic, pine nuts and basil
6. Pound the ingredients together until smooth paste is formed. Adjust seasoning.
7. Add pesto and parmesan cheese to the soup before serving.
