Potato & Peppers Salad


A Healthy and Tasty, Colourful Salad :)


Ok so it's been a while, I have not cooked so thought let me make something!

I enter the kitchen, survey the fridge and cabinets to see what is lying.

Standing near the platform, I'm wondering what should I cook?

My eyes fall on Potatoes, its been ages since I have cooked any thing using Potatoes, the most cursed veggie by the diet inspectors. Trust me boiled potatoes do no harm baby, they are good for you ;)

Then as usual there are those vibrant Bell Peppers lying in the fridge. The sight of them only makes me so happy.

So now I'm thinking should I make some rolls.


With that thought, I put the potatoes in the pressure cooker to boil asap. 

Now while the potatoes are being boiled, I'm feeling a lil sick, feverish kind, guess gotta blame the weather, so now I wonder who is gonna do all that jazz of frying and etc. etc. 

A confession, my mood can be even more volatile than Nifty, by volatile I mean changing mood haan, lol.

So then I decide to cut short the process and do something different.

Lazy me always looking out for shortcuts ;)

So then I take all the veggies and chop them in big cubes.

Take a non - stick pan, drizzle some healthy Olive Oil and toss in the veggies one by one, followed by the seasonings.

So now I wonder is it appropriate to call it a Salad, I guess it is, A Healthy and Tasty Salad :)


Ingredients

4-5 Potatoes - Boiled 
Half Green Capsicum
Half Yellow Bell Pepper
Half Red Bell Pepper
1 Onion
1 Tomato
1 tsp Salt or to taste
2 tsp Jamaican Jerk Seasoning
1 tsp dried Oregano
1 tsp Paprika Powder
1 tsp Lemon Juice 
1 tsp Sugar (Optional)
1 tsp Dill


Method

Heat Olive Oil in a pan, add onions, cook till they turn pale, add tomatoes and cook for a minute, add capsicum and bell peppers, add salt, oregano, paprika powder, Jamaican jerk seasoning, and mix well. Add potatoes and mix well. Add Lemon juice and little sugar (optional)  Mix in well and cook for 3-4 minutes. 
Sprinkle dill over it.

Have hot and enjoy your yummy and healthy salad.
