Farfalle In Herbed Tomato And Walnut Sauce

Last year I had done a series - Let's Play With Herbs, in which I had used fresh herbs, this time I had gone to the Foodhall,
I picked up bottles of dried herbs. So the first thing that came in my mind was I need to cook Pasta. Just few days I gone for an sumptuous Italian Buffet, so Pasta was still lingering on my mind ;)

I have got this really interesting seasoning, it is called Jamaican Jerk Seasoning, besides sugar and salt, it consists onion, thyme, chives, nutmeg, black pepper, all spice, cinnamon and red chilli. So I have used this and other than this I used Oregano, Rosemary and Red Chilli Flakes and fresh Parsley.
I have also added the flavor of roasted Walnuts, which gives a brilliant taste.
By the end of this dish, I was really happy with the look and the taste of the dish prepared. Hope you like it too :)

To make this pasta, I have cooked bell peppers separately and then added them in the sauce.
Bell pepper, also known as sweet pepper or a pepper and capsicum. Beautiful Cooked Sweet Peppers


Bell Peppers don't require heavy cooking, you just need to cook them for a minute or two.

I have taken one Bell Pepper of each color and then slit them long.

To Cook -

Add Olive Oil in a pan, add Bell Peppers, toss it slightly in oil. Add salt and black pepper powder and sauté it for a minute or two. 



How To Boil Pasta - 


Uncooked Pasta



To cook Pasta, you need to boil 6-8 cups of water in a pan, depending on the quantity, if more, add more water, you should give it enough space and water to cook well. Add salt to taste. When water reaches boiling point, add oil - olive or any cooking oil and then add pasta.
Cook it well till it is almost cooked. Be careful, it should not be over - cooked.
After it is cooked, drain the water with the help of a strainer and run cold tap water over it.
If you are going it use it later, then toss little oil and mix it well. Be careful, it should spoil the shape of pasta.

Boiled Pasta


Ingredients


1 tbsp Olive Oil

1 tsp crushed garlic paste

1 onion chopped

1 tomato chopped

100 gms tomato puree

1/2 tsp Jamaican Jerk Seasonings

1/2 tsp Oregano

1/2 tsp Red Chili Flakes

1/2 tsp Rosemary

Salt to taste

Boiled Pasta

Cooked Bell Peppers

1- 2 tbsp fresh cream

Warm Water - 1 glass


Method

Heat Olive Oil in a pan. Add chopped onions and cook till they turn transparent.

Add crushed garlic paste and cook for a few minutes.


Add chopped tomatoes and mix well.


Cook till tomatoes lose the hard texture, soften and blend well with chopped onions.

Add Jamaican Jerk Seasoning, Oregano, Red Chili Flakes and mix well. 

Add tomato puree and mix well till the puree thickens and is folded well with chopped onions and tomatoes.


Add salt.


When oil starts separating add crushed roasted walnuts and mix well. 


 Cook for a few minutes and then add hot water. 

Give it a boil and then cook on medium flame till the sauce thickens.


Add sugar.


While the sauce is thickening add grated cheese.


When the sauce is almost thickened, add bell peppers and rosemary.

Cook for a few minutes and remove it off the heat.

When the sauce is cooled, add cream and mix well.

Bring it back to heat, add parsley and give it a boil.

Reduce the heat on low flame and mix in the pasta.

Cook for a minute or two and then put it on the serving platter.

Garnish it with grated cheese and parsley.


Serve HOT & RELISH ;)
