Crumbled Herbed Cottage Cheese

Cottage Cheese is a part of my daily diet, being a vegetarian, it helps to maintain the protein and calcium balance.
You must be wondering how protein right, see when you make cottage cheese, the left over greenish yellow water is called whey which is extremely rich in protein. So I have that sometimes half a cup and then discard it. You can also use that whey while kneading a dough, if you make rotis.
To make Cottage Cheese at home you need to bring milk to a boil and then add lemon juice or curd or sometimes both. I mostly make use of lemon juice. Once the milk starts curdling, boil it for a few more mintues and when the cottage cheese and whey liquid kind of get separated, strain the cottage cheese.

Now since we are making crumbled cottage cheese, we don't need to put cottage cheese in a muslin cloth to set in shape.

To Make Crumbled Herbed Cottage Cheese


200 gms Cottage Cheese
1 tbsp Olive Oil
1 tsp Ginger-Garlic Paste
1 chopped Onion
1 tsp dried Oregano
1 tsp Red Chilli Flakes
1/2 tsp Black Pepper Grounded
Salt to taste


Heat Oil in a pan, add chopped onions, cook till they turn transparent, add ginger-garlic paste, sautรจ for a few minutes. Add oregano, red chilli flakes and cook, then add salt and black pepper powder. Crumble the freshly cooked cottage cheese with a fork and fold it in the onion mix. Mix it well. Cook on low flame for a few minutes.
Remove it from flame.

Now I have used a French bread, sliced it and filled it with the cooked cottage cheese.

You can use it as a sandwich filling or make an open sandwich with it or stuff it in a bun.
