Schezwan Stir Fried Noodles |
Ok, so I gotta a packet of noodles in my hand. Wondering what should I make out of it. I open the fridge to assess what is lying inside it. Carrots, French beans, Bell Peppers, Capsicum, Baby Corn, Green Onions and yes Schezwan Sauce. Great. Let's give bell peppers a miss even though I love them. So now I have two options - either cook the same regular stuff or try something different. Leaning on one side of the kitchen, with the ingredients spread across at the other side, I look at them wondering, what can I do with them. So on thinking hard, I come to the conclusion, lemme try a new style gravy vegetables. Then how about frying some noodles too! [ I love American Chopsuey, so fried noodles idea comes from there ;) ] And then laying both of them on a bed of ginger-garlic tempered noodles. Seems good na, at least it does in my head visualizing it ;)
Cooking a new dish is like exploring a brand new destination, you don't know how its gonna be till it is completed but the experience makes it special and if the outcome is good, you feel on top of the world :)
So let's get started with the music playing in the background, let's embark on the journey of making a new dish.
Would like to mention, whatever recipes I cook are mostly designed by me, except for a few which are influenced by someone like Mom or a friend or so which I do mention about.
This dish just happened organically. I have not used the cliché soy sauce and chilly sauce which are mostly used in Chinese cooking and with full humility would like to say it turned out to be delicious.
Noodles
Ingredients
1 packet of Noodles
Oil
Salt
Pepper
Green Onions
Ginger - Garlic Paste
To Boil Noodles -
Boil 8-10 cups of water.
Add 1 tsp salt and 1 tbsp oil.
When water comes to a boiling point, add noodles and boil them. Make sure you don't over boil them.
Once boiled, strain them in a strainer and keep them aside.
If your going to use after sometime then toss in some oil over it so that they don't stick.
Fried Noodles -
Heat oil in a pan.
Fry dry boiled noodles and put them on an absorbent paper to soak excess oil.
To Cook Ginger-Garlic Noodles -
Heat 1 tbsp olive oil in a pan.
Add chopped green onion bulb.
Add 1 tsp ginger-garlic paste, cook for till it turns goldenish brown.
Add salt, add a pinch of white ground pepper, add noodles and mix well.
Sprinkle chopped greens of green onions and sprinkle, keep some for garnishing and fold in the rest in the noodles.

Gravy Vegetables -
Ingredients
1 tomato grated
1 carrot
10 french beans
1 packet of baby corns
1 capsicum
( Cut all vegetables lengthwise )
1 tsp oregano
1 tsp red chilli flakes
1 tsp sugar
Salt to taste
1 tsp white pepper grounded
1 glass water
2 tsp ginger-garlic paste
1 tbsp Schezwan sauce
Method
Heat oil
Add ginger-garlic paste, cook till it deepens in color.
Add tomato, mix well.
Add schezwan sauce
Add salt and all the above spices and mix well.
Cook for a minute or two.
Add vegetables and mix well. Cook for a few minutes.
Add water, give it a boil, reduce the flame, add sugar and let it cook on low flame.
Cook till the vegetables are done and the gravy is thick in consistency.
To Assemble -
Lay the noodles spread on a plate.
Topple the gravy vegetable over it.
Spread it evenly.
Garnish with fried noodles, Schezwan sauce and chopped green onion stems.
