I saw a bit of the recipe online to understand how to make and then made my own easy peasy version.
Trust me I made it for the first time in my life, I couldn't believe how nicely it was made because honestly I am not much into Indian Sweets as far aas cooking is concerned!
To Make Kalakand
Ingredients -
1.5 Litres Oil
2 Lemon
1 tbsp Ghee or more if you think you need more
1 tin Condensed Milk
1 tsp finely grounded Elaichi Powder
Method -
Boil milk in a pan, when it is boiled, add lemon 🍋 juice.
Let the milk curdle, once the chenna (paneer/ fresh ricotta cheese) and whey water separate, transfer into a strainer and remove all whey out!
Run the cheese under running water for a few minutes and then keep it aside.
Let it thicken a bit!
Now in a pan or kadhai, add ghee in a pan, let it heat for a few seconds, then add cottage cheese!
Cook it on slow flame for a minutes till it is well cooked but doesn't turn brown!
Then add full tin of condensed milk and sprinkle cardamom powder!
Mix it super well so that it turns out into a beautiful Mithai.
Remove it from, let it cool down for a bit.
Take a nice tin of your choice, plastic, steal or aluminium.
Cover the tin with parchment paper.
Once the Mithai has cooled down, pour it in the tin and garnish it with Almonds and Pistachios.
Set it nicely.
Keep it in the freezer for 10 minutes.
Remove it from the freezer, cut it into nice squares and place it in a air tight container.
So so easy to make and so yummy to relish!
