I personally love making dishes which don't require too many ingredients and are fuss free to make then cooking dessert seem like a headache and what's best when you make simple things with love they taste even more good and are fun to make and enjoyed by all!
Suji Ka Halwa
Ingredients
1/4th cup Ghee
1/4th cup Rawa or Suji
2-3 Cardamom Seeds powdered
1 glass water
1/2 cup Sugar, you can add more if you want it more sweeter
8-10 Pistachios - silvered
8-10 Almonds - blanched silvered
Method
First make sugar syrup. Heat water in a vessel and add sugar. Let the sugar dissolve completely. Bring it off the flame when it changes color.
Heat Ghee in a kadhai, add rawa and mix well. Keep stirring it till it turns deep in color. Add cardamom seeds powder and mix well. Add pistachios and almonds and mix well.
Turn off the flame. Add the sugar syrup slowly and keep stirring continuously. Switch on the flame and keep cooking, stirring it continuously on medium flame till it turns thick.
Place it in a serving bowl and garnish the dish with almonds and pistachios.
Serve hot.
Zarda Pulao
- 1 litre Milk
- 1/2 tsp Cardamom powder
- 8-10 crushed Almonds
- 2 tsp Pistachios for garnishing
- 1 tsp Raisins
- 1-2 tbsp Sugar as per sweetness required
- 1-2 drops of Rose Essence
- 1-2 drops of Rose Food Colour (optional)
- Heat milk in a Kadai till it thickens. It will take two hours or more. You need to be patient.
- When it starts thickening, then at the end, mix in sugar and cardamom powder.
- Remove it from flame in a serving bowl and garnish it with crushed almonds and raisins or pistachios.
- Let it cool.
1 cup basmati rice, soaked in water for an hour, ideally 3 hours is good.
3/4 th liter milk
1/2 cup powdered sugar
1-2 drops rose essence
1-2 drops rose color edible liquid
1 tsp powdered cardamom powder
10 - 12 pistachios for garnishing
Method
Grind soaked rice after straining the water into a fine paste. If need be add little water or little milk.
In a heavy bottomed pan, boil milk, remove it from flame, add rice paste and mix well. Add cardamom powder. Cook it for a few minutes on low flame till it becomes thick in consistency, make sure there are no lumps, in case there are then add little hot milk, or little hot water.
Remove it from flame, mix in the powdered sugar, rose essence and rose color well.
Let it cool for a few minutes, pour it in serving bowl and keep it in the freezer, if your going to serve soon or else keep it down if your serving after 3-4 hours.
1 cup rice soaked in 2 cups of water for 2 hours
1 tin of condensed milk - Milk Maid
1 cup of milk, you can add more if you feel its less
50 gms pistachios shredded
50 gms raisins
1-2 drops of Rose Essence
1-2 drops of Rose food color
1 tsp cardamom powder
Rose petals to garnish (optional)
Heat a pan, add the rice along with the water, add cardamom powder so that it gets a nice flavor, let it cook till the rice is done.
Add milk, then add pistachios and raisins and cook till the rice is mixed well with the milk.
Add condensed milk and cook till Kheer becomes thick in consistency and gets a good texture.
Kindly note, I have not added sugar because the condensed milk is already so sweet that there is no need for sugar.
Let it cool, add the essence and color and milk well.
Place it in a bowl, garnish it with pistachios, raisins and rose petals and keep it in the refrigerator till serving time.
