Cheese Vegetable Poha by Saveen Kaur


One of my favourite Breakfast options is this 😍 
My version of Vegetable Poha ( Flattened Rice ) and yes I have added cheese to it 😋 

Whoever says you can't, make them have it and let them taste it 😉 
Cooking is all about breaking rules to whip up something absolutely lip smacking and healthy at the same time 😄


Ok guys a confession... there was a time I had this fear in my mind about my future 😐 
So I always used to have my breakfast ready on waking up and I always wondered what would I do in future when I have to make breakfast on my own because I am really not a morning person but since a year and a half, I have not only overcome this fear of making breakfast early morning but also have fallen in love with my morning ritual of making my own breakfast and trust me it's the best thing to do. It's like giving yourself the first dose of love to yourself 😃 
You feel happy all day long because it's the first meal that marks the tone of your day and what better way to start your day by making something you love to eat on your own according to your own taste 😋
Trust me when I say this, I feel I can conquer the World after overcoming this fear 😂 
Silly it may sound but it really does make a lot of difference ☺

Ingredients
1 cup Poha ( Flattened Rice )
1 tbsp Oil
8 - 10 Curry Leaves
1tbsp chopped Garlic
1 Green Chilli chopped
1/2 cup Peas
1 Potato chopped
1 Onion chopped
1 Tomato chopped
1/2 Lemon
1 tsp Sugar
1 tsp Red Chilli Powder
1 tsp Turmeric Powder
1 tsp Cumin Seeds ( Jeera )
1 tsp Mustard Seeds ( Rai )
1 tbsp Peanuts ( Roasted and Unsalted )
1 Cheese Cube
Salt to taste
Coriander for Garnishing


Method
Wash Poha in a colander and keep it aside half an hour before making it.
In a pan boil peas and chopped potato together. Strain and keep them aside.
In a frying pan, add oil and let it heat for a few seconds.
Add curry leaves and chopped green chilli.
Add mustard seeds and cumin seeds.
Once they splutter, add chopped garlic and cook for half a minute.
Add chopped onions, cook them till they turn pale in color.
Add chopped tomatoes and mix in well.
Add red chilli powder and turmeric powder.
Add boiled peas and chopped potato.
Let them cook for a few minutes.
Add salt.
Add peanuts.
Add Poha, fold in well.
Add lemon juice and sugar.
Mix it well.
Put it in a serving bowl.
Garnish it with chopped coriander and peanuts.
Sprinkle grated cheese over it.
Serve Hot 😍
And relish it too 😋😋😋
