Instant Greek Yogurt Mango Shreekhand/ Amrakhand by Kamakshi Gupta

Instant mango Shreekhand A.K.A. the most delicious Greek yogurt and Mango dessert infused with freshly ground cardamom pods and served with crushed pistas and cashews! 

This is a simplified and healthier version of the classic Indian dessert particularly relished in the summer months in India.
It takes 10 minutes to whip us these goodness bowls. 

Time: 10 minutes
Makes: 2 serving bowls

¾ pulp of fresh alphonso mangoes 
1&1/2 cups (approx. 250 gms) of Greek Yogurt
1/3 or less coconut sugar- adjust according to sweetness of mangoes 
Finely crushed pods of two cardamoms 
Few strands of saffron (optional)

In a mixing bowl, combine finely ground coconut sugar, and finely crushed pods of cardamom with the yogurt. 
Add the pulp and whisk until the ingredients are well combined.
If you want to add saffron, then the threads should be soaked in a tablespoon warm water and pour the water to the mixture.
Transfer into serving bowls.
Refrigerate and serve chilled with crushed nuts.
Sooo creamy and delicious! Enjoy!

PS: Traditionally this recipe is made using hung yogurt, which takes time to prepare as you need to drain the whey from yogurt to get a thick consistency so Greek Yogurt to the rescue!  It saves time. That is always my aim – simple, wholesome food put together in minutes. - Kamakshi
