Ingredients:
For the tortilla:
1 1/2 cup flour or maida
1/2 tsp salt
1/2 tsp baking powder
2 sprigs of curry leaves chopped finely
1/2 tsp turmeric powder
1/3 cup vegetable oil
1 cup water

For the filling:
Veggies of your choice but I used Peppers, Mushrooms and Onions. Eggplant would go really well too with this!
2 tsp dry coriander powder
2 tsp chilli powder
3 tsp cumin powder
1 tsp garlic powder
3 cloves of garlic, finely chopped
Salt to taste.
Note - this seasoning mix is for 2-3 cups of mixed veggies.

Instructions:
- Mix the salt, baking powder, curry leaves, turmeric into the flour and combine.
- Create a well in the middle and start by adding a little bit of water and combining it with the flour each time.
- Go in with your hands as the dough starts to form, kneading it gently till it all comes together. At this point it should be soft and little sticky.
- Add the oil and continue kneading about 6 mins and leave it aside to rest while you work on the filling.
Filling:
- Chop veggies lengthwise and lightly oil them before put on a roasting tray. Roast in the oven at 190 degree celcius for 10 mins total. You're looking for a char on the top of the veggies.
- In a pan heat a 1 Tbs of Olive Oil and add the garlic and spices/ seasoning mix. Sautee on medium heat until garlic is cooked then add the roasted veggies to this and mix well.
- Now form equal sized balls from the rested dough and flatten these out. Then go over lightly with a rolling pin to spread into a circular shape.
- When pan is very hot, place one dough circle into pan and allow to cook about 1 minute or until bottom surface has a few pale brown spots. The uncooked surface will begin to show a few little bubbles.
- Let the tortillas cool down before stuffing them with the filling. You can pre-make these and store in a kitchen towel to keep them soft.
- Serve these tacos with cheese and a tomato salsa
