Tomato Soup

Cooking delicious tomato soup is not easy.


Onions 45g
Butter 15 g
Carrot slices 50g
Chopped celery 15
Tomatoes 1 kg
Water 625 ml

Sauté sliced onions in butter till translucent.
Add carrot slices, chopped celery and cook for a few minutes.
Add cut tomatoes and cook till tomatoes get mashed.
Add water .
Cook for 30 minutes with occasional stirring.
Puree and strain.
Add 15 leaves of basil tied in muslin cloth, add salt and white pepper.
Boil and remove basil after first boil.
Adjust thickness and finish it with 100gms cream.
