Ingredients
Rice paper rolls sheets(soaked in water for 30 minutes) - 4 nos
For stuffing
Cucumber shredded - 20 gms
Carrots shredded - 20 gms
Coriander leaves - 10 gms
Bell peppers shredded - 20 gms
Mixed bean sprouts - 50 gms
Microgreens - 25 gms
Mint leaves shredded - 10 gms
Crushed peanuts - 25 gms
Seasoning powder/Aromat - 2 gms
For salsa
Chopped fruits 4 types - 50 gms
Lemon juice - 5 mls
Chopped jalapeno - 5 gms
Chopped coriander - 2 gms
Crushed black pepper - 2 gms
Red chilli chopped - 5 gms
Plum sauce - 30 mls
Method
1. Dry the soaked rice paper sheets and spread 2 sheets one on top of the other.
2. Mix all ingredients for stuffing and put at one corner of the rice paper.
3. Roll it tightly like spring roll and press it at the edges so that edges stick.
4. Keep wrapped in a moist cloth and keep in fridge.
5. For salsa mix all ingredients and make sure its consistency is thick.
6. Cut the rice paper rolls into small pieces and serve with spicy fruit salsa.
