Salad of Water Melon with Cottage Cheese(paneer) with assorted Lettuce Leaves, Tomato Vinaigrette and Pine Nuts!!!
Tomato vinaigrette -
50 gms tomato sauce, 100 ml olive oil, salt and crushed pepper churned in blender
Method
Mix lettuce with tomato vinaigrette.
Arrange on a rectangle of watermelon slab marinated in salt, pepper and tomato.
Place some dressed leaves on top.
Place one marinated cottage cheese rectangle of the same size as watermelon but very thin approx. 5 mmn (raw paneer cut and marinated a la minute with crushed black pepper, salt and tomato vinaigrette).
Place dressed lettuce again and a slab of paneer and top up with some lettuce leaves.
Garnish: pan broiled warm pinenuts around on top with some tomato vinaigrette flowing around the plate.
