Dark Chocolate Cup Cakes With Strawberry Cream

I hardly bake cakes, the reason being they are so high in calories ;)

I was going through my wall on Instagram (Instagram Handle @savskitchen), I realised I have hardly made any desserts so it was a conscious decision to make some now ;)
In the next few posts, you will see more desserts coming up!

So on that note I thought I should make some Cup Cakes, so here they are.

Now please note that I have hardly baked in my life, the first Cup Cake I had made was Strawberry Cup Cakes during Christmas which are posted on the blog, this was my second time and I would like to say, it was a fantastic experience. You can see it from the pictures below ;)
So since I hardly bake, I needed some directions for which I referred to my fav Nita Mehta's books
In Cooking you can experiment a lot on your own but for baking you need to have the right measurements.
I had a blast while making the icing and made designs using all tips. I have taken a picture of each, you can have a look below :)

So lets get started with making yummy Cup Cakes :)


Dark Chocolate Cup Cakes

Ingredients

1+ 3/4 cups flour
1+1/3 cups powdered sugar
4 tbsps cocoa powder
1 tsp baking powder
1/2 tsp salt
1 cup cold refrigerated water
1/4 cup oil
1tbsp white vinegar
1 tsp vanilla essence
1/4 cup soda water









Method

Preheat oven to 180 degree C.

Line a muffin pan with paper cups.

Whisk flour, powdered sugar, cocoa powder, salt, baking powder and baking soda in a bowl and keep aside.

Put cold water, oil, white vinegar and vanilla essence in a big mixing bowl.

Add flour, mix in 2-3 batches, folding gently with a wooden spoon each time. Do not over mix.

Pour 1/4 cup soda water. Mix quickly.

Put batter into prepared pan. Bake in preheated oven for 25 minutes or until done.

Let it be in the oven for sometime after it is done and then remove it when cool.

Now while the cup cakes are being baked, you can prepare the icing which hardly takes any time!






Strawberry Cream Icing






Ingredients

100 gms unsalted butter, softened
200 gms icing sugar
1/2 tsp strawberry essence
Strawberry edible color

Method

Beat together the butter icing sugar, strawberry essence and color.

Put it in a piping bag.

Your icing is ready to be played around with ;)
