Paneer & Peppers


Ten minutes is what it took me to make this delicious and good looking dish! Was wondering if I should call it Jhatpat Paneer ;)


Ingredients

1 tbsp Olive Oil
1 cup crumbled cottage cheese
1 onion - chopped
1 tomato - chopped
1 tbsp chopped red bell pepper
1 tbsp chopped yellow bell pepper
1 tbsp chopped capsicum
Salt to taste
1 tsp oregano
1 tsp Jamaican Jerk Seasoning
1 tsp red chilli flakes
1 tsp sugar (optional)


Method

Heat Olive Oil in a pan.
Add chopped onion and cook till it turns transparent in color.
Add chopped tomatoes and cook for a minute.
Add chopped bell peppers and capsicum.
Add salt, oregano, Jamaican jerk seasoning and red chilli flakes.
Cook for a few minutes till the peppers are cooked.
Add sugar and mix well.
Add cottage cheese, mix well and cook for a a minute.
Serve hot with roti.

You can also use this as a stuffing in a bun or a roll and eat it or make a frankie out of it.
