Paneer Capsicum


Sunday quick fix

Its a dry paneer subzi which can be eaten with Roti or used as a filling in wraps and frankie and also can be used in croissants.

Serves - 4

Time taken - 20 mins

Ingredients -

1 liter milk - make cottage cheese home - Boil milk, when it reaches the boiling point, add curd 1 tbsp or lemon juice of two lemons, when the paneer is formed, strain it, remove the liquid whey, retaining the paneer in the strainer.

1 onion chopped

2 tomatoes chopped

1 green capsicum chopped

1 tbsp ready made red thai curry paste

1 tsp salt or to taste

1 tsp ginger garlic paste

1 tbsp butter

1/2 tsp red chilli powder

1/2 tsp dhania-jeera powder or coriander seeds and cumin powder

1/2 tsp jeera powder or cumin power

1 tsp sugar

1/2 tsp haldi or turmeric powder

Method

Heat butter in a heavy bottomed pan, add onions, cook till colour turns white, add ginger-garlic paste, cook till color turns goldenish, add tomatoes, cook till they become little soft, add red thai curry paste, mix well, add salt, haldi, and rest masala's. Mix well. Add capsicum and mix well. Let it cook for 3-4 minutes. Add sugar and mix well. Add paneer and mix it well. Cook for 2-3 minutes. Serve hot.
