Mushroom Bouquet Garni Soup


200 gms mushroom
3 sticks of Oregano
3 sticks of Thyme
5-6 leaves of Basil
Little Parsley
5-6 leaves Orange Mint
2 sticks of Rosemary
1 bay leaf
1 tbsp butter
A pinch of Cayenne pepper
3 flakes of garlic
1 tsp ground white pepper
2 tbsp plain flour
3 cups water
2 cups milk
3 tbsp cream
1 tsp salt or to taste
1 onion chopped


Make a puree of mushrooms. To make the puree, heat and melt butter in a pan, add bay leaf, add onion and garlic, cook for a few minutes. Add chopped mushrooms. Keep 1/4 th mushrooms aside to use later. Add salt, white pepper and cayenne pepper. Cook for 5-6 minutes till. Add flour. Mix it well. Add water. Cook for a few minutes on low heat covered. Let it cool and then grind it into a smooth puree. Add little milk if needed.
Tie all the herbs together in a string and make a bouquet. Wash it.
Pour the puree in the pan and add milk, add mushrooms, add the bouquet of herbs and boil and then let it simmer on low heat till you get a nice fragrance of herbs. Remove the bouquet and add cream and very little thyme separated from the stem and mix well. Cook on low heat for a few minutes. 
Your soup is ready! Enjoy with some mini buns or bread of your choice :)
