Healthy Coin Pizza by Saveen Kaur


Super delicious and healthy take on Pizza! 

Hey lovelies so I had made this deliciousness for breakfast yesterday! 
Being a Saturday, I was in a mood to start my day with some delicious indulgence and so made this! 

Best part about making this was that it hardly took any time and and it turned out to be so good and filling! 

So instead of using processed cheese, I have made Fresh Ricotta Cheese at home. I will share the recipe of that too below, I must have shared it in one of the old posts but to make it easy for you, I will share it here again! 

So instead of making the sauce individually, I did something different, specially since it's a coin pizza so to fit in everything properly, I have chopped and sliced the veggies very thin and cooked them in a saucy form, gravy wouldn't be the right word because it's not that heavy like a Gravy! 

Ok so let me share with you the recipe of how to make Fresh Ricotta Cheese first! 

To make the cheese you need 500 ml milk and 1 lemon! 

In a pan, boil the milk, once it gets boiled, reduce the flame and add lemon juice over it. Mix in the milk and lemon juice well so that the milk curdles and starts releasing yellow liquid which is called whey! 
Once the cheese starts forming and starts separating from the whey, switch off the gas and let it be like that for a few seconds! 
Strain the cheese and keep it aside for 15-20 minutes! 

Now let me share something really informative with you that you can use this whey to make dough for your roti's instead of water or otherwise you can also drink a bit of it by adding a bit black pepper powder and black salt in it! It is highly nutritional! 

Now let me share with you the recipe of making saucy veggies! 

Ingredients - 

1 Onion sliced thinly

1 Capsicum diced thinly

1 Tomato diced thinly

1 tsp Black Pepper Powder

1 tsp Black Salt

1 tsp Red Chilli Flakes

1 tsp Dried Oregano 

2 tsp Ginger Garlic Paste 

2 tbsp Tomato Ketchup 

2 tbsp Whey Liquid or Regular Water

1 tbsp Olive Oil

Salt to taste

Method - 

In a pan add Oil, then add Onions. 

Add Ginger Garlic Paste and mix in well, saute for a few minutes till onion turns translucent. 

Add diced Tomatoes and Capsicum, mix in well. 

Add the above mentioned spices, seasonings and salt and mix in well. 

Add tomato ketchup and water and mix in well. 

Cook it for a few minutes till the veggies get coated well in the sauce and is still little liquidy in consistency! 

Keep this aside. 

Kindly note this quantity is sufficient for 5 Coin Pizza's, to make more, double the quantity of the saucy Veggies and Ricotta Cheese. 

Now to Assemble the Pizza - 

Toast the Coin Pizza on a non stick pan till it becomes slightly crispy. 

Apply butter on one or both sides if you want. 

Place a Basil leaf on Pizza Base, then add saucy veggies accordingly. Cover it with Ricotta Cheese and then Garnish it with a Basil leaf! 

Repeat the same for others. 

Place them on a non stick pan and let them cook on slow flame for a 5 - 8 minutes. 

Your healthy Pizza's are ready to be relished! 

You can also add Processed Cheese over it, and instead of Ricotta Cheese, it is all on you! 

A little cheese never hurt anybody 😉
