No Rules Pasta by Saveen Kaur

 


This Pasta is made with love, followed by instinct and is healthy! Yes you read it right :)
For me cooking is like meditation and I find it to be so much fun when I blend in ingredients together and it gives me a delicious outcome which is loved by all!

So when I go to make something in the evening, I see what it there in the fridge and make an on the spot decision to make whatever I feel like.

That is how this pasta was created!

By the way this has a few Chinese food elements as far as the sauce is concerned and a bit of Indian food as far as Cottage Cheese and Shahi Paneer Masala is concerned.

Please don't judge my Pasta, because for me cooking is all about breaking rules, creating a beautiful and delicious fusion which is thoroughly relished 😋

Please note, if you have wheat pasta or pasta made with some other healthy alternative, this dish will be super healthy and less in calories for sure!


Serves - 5

Ingredients - 

200 gms Pasta of your choice
2 tbsp Olive Oil - 1 tbsp for boiling Pasta, 1 tbsp for cooking Pasta
1 Onion sliced
1 Tomato chopped
1 Green Capsicum diced
1 cup Broccoli
2 tsp finely chopped Garlic
1 cup Cottage Cheese
1 Cheese Cube roughly sliced
1 tsp Oregano
1 tsp Red Chilli Flakes 
1 tsp Black Pepper Powder
1 tsp Shahi Paneer Masala 
1 tbsp Red Chilli Sauce
1 tbsp Green Chilli Sauce
Mint leaves for garnishing
1 litre low fat Milk
1/2 cup low fat Milk
1/2 cup Water
1 tbsp Lemon Juice or 1 tbsp Vinegar
Salt to taste


Method - 

Make Homemade Cottage Cheese -

In a bowl add 1 litre Milk, boil it.
When it comes to a boil, add lemon juice or vinegar.
The milk will curdle and it will separate into two parts, one will be liquid whey which will light yellowish in color or other part will be cottage cheese.
Strain the liquid whey out from the Cottage Cheese.
Remove the Cottage Cheese in a bowl and keep it aside.


Boil Pasta -

In a huge bowl, add water upto 3/4 th level, let it boil.
Add a pinch of salt and oil.
Add Pasta.
Let Pasta boil till done!
Make sure to not over boil so keep checking!


Boil Broccoli - 

In a bowl, add 3/4th level water, let it boil for 3-4 minutes.
Add salt.
Add Broccoli.
Boil it for a few minutes.
Remove it from flame and let it be in hot water for a few minutes, then strain it and keep aside.


Prepare Pasta - 

In a pan, add oil.
Add garlic and cook till it turns golden in color.
Add onion and cook it till turns transparent in color.
Add tomato and capsicum and cook for a few minutes.
Add shahi paneer masala, black pepper powder and salt and mix in well.
Add both sauces
Combine 1/2 cup milk + 1/2 cup water in a cup and pour it inside.
Give it a boil and then reduce the flame to medium.
Add oregano and red chilli flakes.
Add Pasta and mix it in well.
Let it cook on a medium flame till the liquid is completely soaked up and pasta is well coated.


While serving, put a serving in each plate, garnish it with boiled broccoli, cottage cheese, cheese, mint leaves and a bit of red chilli flakes as shown above in the picture.

Serve and Relish it!
