Strawberry, Basil, Balsamic Pizza by Nitika Goenka

 


An innovative twist to Pizza 🍕


"I’ve been itching to share this Strawberry Pizza with you all for over a week now as the season has arrived. Strawberries on a pizza might seem a little funny at first, but if you think about it, tomatoes are fruit, too. Strawberries get all juicy and roasty in the oven like tomatoes do, too. Combine them with fresh cheese (chenna), mozzarella and cheddar cheese that melts into oblivion on a whole wheat crust and you just might find a new favourite. Top it with fresh basil and a drizzle of balsamic reduction and, you guys this pizza is a revelation in itself, and is also super simple to make."  - Nitika



Ingredients






Pizza
2 whole wheat pizza base
1 ½ cups Amul diced mozzarella and cheddar cheese
1 cup fresh cheese (chenna) crumpled
1 ½ cups (about ½ pound) chopped strawberries, leafy ends removed and sliced it not too thin or thick in round shapes
Handful of fresh basil, chiffonade into short little strips
freshly ground black pepper
Salt to taste 
2 tbsp melted or soft butter / olive oil



Balsamic reduction
1/4 cup balsamic vinegar
2 tablespoons honey




Instructions 

1. Preheat your oven to 350 degrees.
2. Take fresh cheese in a bowl crumple it add salt, black pepper add few strips of basil and toss it and keep it aside.
3.  Take the pizza base and brush it with butter both side. Then top it with crumbles of fresh cheese mix (chenna), strawberries and diced mozzarella and cheddar cheese. 
4. Bake pizza until the cheese is bubbling and golden and the crust is crisp underneath, about 15 to 20 minutes. Depend on oven to oven.
5. Meanwhile, make the balsamic reduction. In a small saucepan, combine the vinegar and honey. Gently simmer the mixture on medium-low heat until it is reduced in volume by half (this should take about 10 to 15 minutes) and set aside.
6. Once the pizza is done baking, top it with a sprinkle of  basil and freshly ground black pepper. Use a spoon to lightly drizzle balsamic vinegar on top. Slice it and serve!
