Potato In A Blanket - Aloo Bombs by Dipti Kalkonde




A spicy potato based filling inside a blanket of perfectly crispy bread crust. A recipe that can easily make a weekend breakfast or a weekday snack , tad bit more special. Just team it up with lightly toasted bread , dip of your choice and ketchup. And ,how can I forget … ginger tea!

Ingredients 


Bread slices - 10 
Potato , medium-sized , boiled - 4 
Onion , medium-sized , chopped - 1 
Carrot, peeled and chopped - 1 
Green chili, Chopped - 1 
Garlic , peeled and crushed 3 cloves of 
Coriander leaves , finely chopped ½ cup 
Red chili powder 1 tsp 
Cumin powder 1 tsp 
Garam masala ( optional) 1 tsp 
Chaat masala 2 tsps 
Salt to taste 


Method

In a bowl mash the boiled potatoes. 
Add chopped onion, chopped carrot , green chili and garlic to it. 
Mix everything together. 
Add the spices , red chili powder, cumin powder, garam masala , chaat masala and salt. Mix properly. Add chopped coriander leaves and mix and keep aside. 
Take a piece of bread. Cut it in half. 
Take some water in a flat dish. 
Dip the bread in it and squeeze it between your palms to drain excess water. 
Put a tablespoon of the filling in it , and wrap the wet bread around it, so that it covers the entire filling. 
Repeat the same with all bread pieces. 
Now deep fry these in hot oil on medium flame , till they become golden brown from all sides. 
Serve hot with any dip or ketchup of your choice. 

Tips:


  • Do not overcook the potatoes, or the filling becomes wet and soggy. 
  • Adding garam masala is optional. If you don’t have it , or don’t like it , you can totally avoid it. 
  • Squeeze the water out of the bread properly, or else it will be difficult for you while frying 
  • Use fresh bread if possible , otherwise while wrapping the filling it might break. 
  • No need to steam the carrots, they get cooked while frying to just the right amount.
