I had a ROCKING TIME while making this dish!
I was giving live updates on Instagram and Twitter. It was so much fun! The best part since I was cooking impromptu without any plan, I was giving out details which made my life so simple because I didn't need to jot down quickly after making the dish. I just went with the flow while cooking and it was supa fun :)
I'l share with you my grams and of course the recipe too!
Ingredients
1 Tomato chopped
1 Tomato grated
1 Onion chopped
1 cup Broccoli
1 Capsicum sliced
1/4 th Zucchini peeled and sliced
1 cup Fusilli
2-3 cloves of Garlic sliced long
1 tsp Oregano
2 tsp Jamaican Jerk Seasoning
1 tsp Rosemary
1 tsp Dill and for garnishing
Salt
1-2 tsp Paprika Powder
1 tsp Black Pepper Powder
1 tsp Red Chilli Flakes
1/4th to Half Cup Milk
Half Cup Hot Water
Boiled Pasta |
Olive Oil
1/4 th cup grated Cheese
Method
Boil Pasta
Sauce -
Heat 1 tbsp Oil in a pan.
Add sliced garlic and cook it till it turns brownish red.

Add grated tomatoes and chopped tomatoes.
Add Oregano, Rosemary, Jamaican Jerk Seasoning, Rosemary and Paprika Powder. Cook for a few minutes. Add salt and cook till the onion and tomato base starts leaving oil.
Add hot water and give it a boil, then cook on low flame.
Add dill and red chilli flakes.
Add sugar.Cook till the sauce thickens.
Add milk. Give it a boil and then cook on low flame till the sauce is thick enough to coat pasta and veggies.
Keep it aside till serving time.
Vegetables -

Heat Oil in a non-stick pan.
Add Broccoli, Capsicum and Zucchini.
Add 1 tsp salt and pepper.
Sauté
Cook it covered for a few minutes only, does not require heavy cooking.
Assemble
Add the cooked vegetables and pasta in the sauce.
Add fresh basil leaves and grated cheese.
Cook it on low flame till pasta and vegetable are coated well with the sauce.
When done, transfer in the serving bowl and garnish it with Cheese, Fresh Basil Leaves and Olives.
Sprinkle some Dill too ;)
