Amaranth Fusion

I am a major chaat lover and I love to mix n match things, fuse them together and make new combos. I was in a mood to have a chaat at home but wanted something different from the regular stuff, so on contemplating for a while I thought of trying out a new kind of chaat which I have termed Amaranth Mix. Loved the outcome and was even more happy when my folks relished it :)

Roast 1 cup amaranth in a skillet on low flame, stirring it continuously for 5 minutes
1 onion chopped
1 tomato chopped
Roasted Amaranth
1 tsp salt
1/2 tsp red chilli powder
1/2 bhuna jeera powder
1 tbsp lemon juice
6-7 tbsp of dates & jaggery chutney or as per required
10-15 crushed peanuts
 5-6 crushed bhel puri's
5-6 tbsp nylon sev
 nylon sev to garnish

Remove the peel of roasted peanuts before crushing them

Crush peanuts with a rolling pin by putting them in a thin plastic bag and then roll over the rolling pin

Mix them all together.
Transfer into individual serving bowls or in a big bowl and garnish with sev and puri.

Dates and Jaggery Chutney

150 gms jaggery
100 gms red seedless dates
2 dry chillies
1 tbsp jeera
1 - 1/2 glass water

Put the above contents to boil together for 20 mins.
Let them cool and then grind into a fine chutney.
Use how much ever required and then store it in a air tight container and place it in the fridge.
