Shahi Korma


Food is something where everyone have their own preferences, some like some particular cuisine and mostly stick to those while some love experimenting and trying new variety. As far as I am concerned, I love all cuisines, love experimenting and try new dishes and explore new places but my lil Sista is not much of a Mughlai fan, she prefers more of Chinese and Italian, so if we want to go to a Mughlai food joint then we need to bribe her with Navratan Korma, one of her favorite dishes, then she happily settles for a Mughlai fare. So here I have tried my own variation of this delightful dish and the outcome was quite pleasing, my Sis loved it :)

Shahi Korma




Ingredients

Oil for frying
1 - 2 tbsp ghee
2 carrots
8-10 french beans
1 cup peas
8-10 florets of cauliflower
1 onion chopped finely
3/4 tbsp ginger - garlic paste
100 gms cottage cheese
1 cup curd
2 tbsp dessicated cocunut
1 tbsp khus khus (poppy seeds)
1 tbsp magaz (melon seeds)
1 tbsp cashew nuts
1 tsp javetri (mace) powder
2 tsp salt or to taste
1 tsp red chilli powder
1 tsp garam masala powder
Half tsp turmeric powder
Half tsp cinnamon powder
1 tsp cardamom powder
1 tsp coriander seeds powder
1 tsp cumin powder
Fresh cream (optional)
1 tbsp raisin
Half tbsp walnuts
Half tbsp blanched almonds
3-4 slices of tinned pineapple
1 tsp sugar
1 cup water

Vegetables

Boil all the vegetables together, except pineapple, strain them and keep aside.

Curd Mix

Mix curd and dessicated coconut well and keep aside.

Khus Khus, Magaz and Cashew Paste

Add all three and boil them for 5-10 minutes and keep aside. Grind them when it cools.

Cut paneer in small cubes and fry.

Method

Heat ghee in a pan.
Add onions and cook them till they turn golden brown in color.
Add ginger - garlic paste and cook for 2-3 minutes.
Add the curd mix and cashew paste.
Add garam masala, salt, turmeric powder, red chilli powder, mace powder, cardamom powder, cinnamon powder, coriander seeds powder and cumin powder. Mix well. Cook on low heat till the masala is cooked properly.
Add raisins, almonds and walnuts.
Add water and boil for 2-3 minutes, then add the veggies, add fried paneer cubes, add chopped pineapple, add sugar and cook on low heat till the veggies get enveloped well with the gravy.
If u want to add cream, then remove the dish from flame, let it cool, add cream and mix well.
 Before serving, garnish it with raisins, walnuts, fried cashews and fried paneer cubes.
Serve this yummy dish hot with roti or naan.
