Sunset Delight - Panini, Cheese and Bell Peppers

Sunset Delight



Some things just happen accidentally. I had called my Bread shop for a bread and the only bread she had was a flat Panini bread so she sent it over, I was wondering how to use it and make it delightful so this is a dish I just randomly came up with.
Now after making the dish I was confused about what to call it, after thinking for sometime a name struck - Sunset Delight! I love colors and love my food to look colorful too. It reminds me of my days when I used to paint, I used to love mixing colors to make new colors. So yellow plus red equals to orange. Orange is the color of sunset and I somehow would ideally prefer eating this dish in the evening with some good coffee, sitting by the sea if possible and of course nice company to have some good chit chat ;) So this is the logic behind this name but then what's in a name, what matters is, content and that is solid for sure ;) Would love to get back to painting but I feel to bring out the creative best in you, especially painting, you need time, a separate space (I love to keep my paints, brushes and canvas scattered and dare anyone move anything), solitude (Gimme PEACE - no phones too), and most importantly inspiration and you know what right now I am short of all four :(
Never mind will paint some other time in future, right now let the creative juices flow through kitchen expeditions!

This was the last I had painted in 2010

So let's get back to the dish, you don't need to follow my preference, you can keep it for lunch or dinner also in case you cooking up Italian fare. Or you can also keep it for a tea party, quite filling, very easy, does not require too much time to make and looks beautiful too.

 

Ingredients

1 tbsp oil
2 tomatoes chopped
2 onions chopped
1 tsp salt or to taste
1 tsp red chili flakes
1 tsp oregano
1/2 tsp sugar (optional)
1 tbsp chopped parsley
1 flat panini bread
200 gms cheese

Tomato Base

Heat oil in a pan, add onions and let it cook till the color turns transparent.
Add garlic and let it cook for a minute or two.
Add chopped tomatoes and mix it well. Cook it for 2-3 minutes, add salt, chilli flakes, oregano and sugar. Add parsley. Cook it till tomato loses shape and melts in paste form and let's out a nice aroma.




Assemble

Apply the tomato base on the bread. Spread out the bell peppers. Sprinkle grated cheese all over and put some bell peppers on top. Grill it in the oven for 15 minutes till the cheese melts and the top of the cheese is little brownish. Remove from the oven. Garnish it with some dried oregano.
