Paneer Lababdaar




Recipe: Harkirat Uberoi 



Paneer - 200 grams
You may choose boneless chicken or mushrooms or even nutri nuggets, as per your likes.

In a pan, crackle 2-3 cloves, 2 small sticks of cinnamon, 1 whole red chilli and 1 tspn cumin seeds in about 40-50 ml oil.
Tip in 1 tspn heaped of chopped garlic, saute for a minute, then add 2 chopped green chiilies, followed with 1/2 a large onion, finely chopped and saute on medium heat for 3-4 minutes.
Add 1 tsp chopped ginger and the veggies.


To prepare veggies :

Dice 1/2 a large onion, 1/2 of a green and red bell pepper each
Saute for about 2 minutes, add 1/2 tsp salt and now in goes Paneer cubes. Stir around well.


Make a spice blend with :

Yoghurt - 100 grams, thick, beaten well
Red chilli powder - 1/3 tsp
Turmeric - 1/2 tsp
Coriander powder - 1/2 tsp
Garam masala powder - 1/3 tsp
Black pepper powder - 1/3 tsp
Cumin powder - 1/3 tsp
Salt - 1/2 tsp
Tomato paste - 1 tbsp


Add this paste to the cooking Paneer n peppers and slowly mix in the whole gravy blend, ensure to keep a medium to low heat and gradually turn in the blend without letting Paneer pieces break.
Allow to simmer for about 2-3 minutes, add about 50-75 mls water, again mix it in well and let simmer on low flame, sprinkle some chopped coriander. The gravy consistency shall reach a delighful smoothness and switch off flame, serve immidiately with Parathas / Pulao.
