Stir Fry Tofu

Last evening I found a fresh lot of medium firm tofu had arrived at the regular mall I visit so wasted no opportunity to grab a packet and the veggies to prepare a Stir Fry for my lunch today.
I am not a big Tofu fan but i do love to have it once in a while and that perhaps was the pampering for this friday, as it seemed destined.
Keeping it simple, i went about preparing the vegetables and the tofu, collecting all ingredients and sauces, the pesto and chillies and seasonings. Its all a matter of minutes when you wanna do a stir fry so its best to have all that you need well prepared and at hand so that the dish can be prepared in a jiffy and without much fuss, let the vegetables retain most of the color and crunch, raw flavors and subtle hint of the spices that we use.

Chili Garlic Basil Pine nut pesto : 1 tsp
Hot chilli paste : 1 tsp
Garlic paste : 1 tsp
Tofu : 100 grams
Onion : 1/2 medium
Colored peppers : 60-70 grams
Carrot : 30 gram sliced par boiled
Ginger : 1 tsp jullienes
Green chilli : 2 sliced
Garlic : 5 cloves sliced
Dry whole red chilli : 1 sliced fine
Salt and Black pepper : to taste
Kikkoman light soya : 1-1/2 tsp
White vinegar : 1-1/2 tsp
Oil : 2 tbsp

On a high flame, heat pan well, add oil and just toss the tofu lightly and remove to add later.

In same pan, add sliced garlic, then onions, then garlic paste, then sliced red chillies, then colored peppers, then green chillies, then ginger, then carrots, then salt n pepper, then chilli-basil pesto, then chilli paste, then soya sauce, then vinegar, then tofu (and before every then give a toss and stir) and then remove to a plate, (now no need to toss or stir, then eat !! LOL
