Sabz Pudina Masala





Recipe : Harkirat Uberoi 



An ensemble of vegetables and paneer with cashewnuts in flavors of asafoetida and mint, simply divine !!


Par boiled small diced carrots n beans, peas and cauliflower florets - all about 250 grams
Cut capsicum - 1 medium
Chopped an onion, a tomato, 15 grams ginger, 2 green chillies.


Heat about 40-50 ml oil, add cumim, red chillies dry, cloves, cinnamon and asafoetida.....:allow to crackle just a wee, tip in a tbsp of giner-garlic paste, saute and then the onions go in. Cook till translucent, add tspn of salt, cook further, add turmeric, chilli powder and coriander powder. Add the ginger then add tomato and some tomato paste.

Cool for a good 6-8 minutes then add the 300 grams paneer and boiled vegetables, stir cook for two more minutes, add capsicum and 20-25 cashews. Check seasoning, stir gently to cook well, add a few sprinkles of water, if needed.

Sprinkle dried mint powder and switch off flame.

To serve top with ginger, mint powder, black pepper powder, enjoy BON APETIT !!
